The transduction mechanism of taste has been rapidly elucidated by patch-clamp studies, which make it possible to reveal the role of ion channels of taste cell membrane in generating receptor potentials. Recent electrophysiological studies including patch-clamp studies indicate that salty taste is transduced by an influx of Na ions through amiloride-sensitive Na channels in the apical membrane of taste cells and bitter and sour tastes by closure of K channels.
